Chicken Cordon Bleu Meatloaf Extravaganza

This Chicken Cordon Bleu Meatloaf combines the classic flavors of ham, Swiss cheese, and Alfredo sauce in a hearty, crowd-pleasing dish.

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 oz sliced ham
  • 8 oz Swiss cheese, shredded (reserve 1/2 cup for topping)
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 cup Alfredo sauce (for drizzling on top and serving)

Instructions

1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, egg, milk, garlic powder, onion powder, thyme, salt, and pepper. Mix until just combined.
3. On a flat surface, flatten half of the chicken mixture into a rectangle about 1/2 inch thick.
4. Layer the sliced ham evenly over the chicken, followed by the shredded Swiss cheese.
5. Carefully roll the chicken mixture, starting from one end, to create a log shape, sealing the edges as you go. Place seam-side down on the prepared baking sheet.
6. Repeat the process with the remaining chicken mixture to form a second log, or use it to cover the first log to create a double layer for extra heartiness.
7. Sprinkle the remaining shredded Swiss cheese on top of the meatloaf.
8. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (75°C) and the cheese is bubbly and golden.
9. Remove from the oven and let it rest for 10 minutes before slicing.
10. Drizzle with Alfredo sauce and garnish with chopped parsley before serving.
