Peppermint Chocolate Crunch Cookies

Peppermint and chocolate are the ultimate holiday duo. The combination of chewy chocolate cookies with crunchy peppermint pieces and a swirl of white chocolate drizzle gives these cookies an irresistible festive flair.

  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup crushed peppermint candies (or crushed candy canes)
  • ½ cup white chocolate chips (optional for drizzle)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In another bowl, combine the all-purpose flour, cocoa powder, baking soda, and salt. Whisk together to ensure even distribution of dry ingredients.
  5. Gradually add the dry mixture to the wet mixture, mixing just until combined. Avoid overmixing.
  6. Fold in the semi-sweet chocolate chips and the crushed peppermint candies to the cookie dough.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes. The edges should look set, but the centers may still look slightly underbaked.
  9. Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  10. Optional: Melt the white chocolate chips in a microwave-safe bowl in 30-second increments until smooth. Drizzle over the cooled cookies for an extra touch of sweetness and decoration. Let it set before serving.
